Cold Dandelion Leaf Soup

I felt a bit Hugh Fernly-Whittingstall, so I made a Cold Dandelion Leaf Soup with slices of stale bread, a bunch of dandelion leaves from my backyard, some garlic, onion and thyme.

 

I added drizzled some olive oil over it to make it a bit more velvety. The dandelion leaves were a bit astringent, but weren't as strong tasting as I had hoped. Maybe I should add some petals next time! :P

 

The bread made the soup nice and smooth though!
