Special Chilli Sauce - Hongyun Chinese Restaurant

The noodles are smooth and chewy, the soup base is well-rounded and flavoursome, and the 生煎汤包 Pan-Fried Pork Buns were fluffy bread outside with a juicy pork filling inside. At the bottom of the buns was a crisp shell from the pan-frying.

 

A very typical dish of 卤方干鹑蛋 braised beancurd was given a twist with the addition of quails eggs! A more typical choice would be chicken eggs, but the quails egg had a much smoother yolk and the thinner egg white meant that the braising liquor permeated the yolk.
