Alpha's Roast Chicken with Prune-Pistachio and Sausage-Onion Stuffing

The stuffings were adapted from:

- Roast chicken rolls with Christmassy stuffing, from All this in two days, by Jill Dupleix, The Age, Epicure, December 22, 2008 - i used 100g prunes, 3 tablespoons pistachios, half a beaten egg parsley, breadcrumbs, lemon zest, lemon juice, cinnamon, cloves

- Roulade of Turkey with a Pork, Sage and Onion Stuffing - Delia Smith, and I added a handful of pistachios to lighten the stuffing. Delia also has an even simpler version using pre-packaged stuffing Roulade of Turkey with a Pork, Sage and Onion Stuffing - Delia Smith
