Beetroot, Mozzarella and Watercress Salad

Roasted Baby Beetroots, Shaw River Buffalo Mozzarella and Watercress Salad with a Vincotto and Red Onion Vinaigrette.

 

Quite a yummy combination!

My red onion vinaigrette was tempered with a little vincotto to reduce tartness, which went well with the watercress sprouts.

 

The Shaw River Buffalo Mozzarella was smooth and creamy with a faint taste of milk. Nice, but nothing fantastic.
