Minced Pork, Crab Meat, Chicken Feet Jelly - dumpling filling

We got a pack of frozen crab meat from Julia's aunty, so Julia had fun trying to think up ways to use it. It's a pity that it's not very tasty crab though, so we tried to pair it with minced pork in dumplings.

 

Julia decided that she wanted to replicate the juicy mouthful of soup that is often hidden in dumplings, and the trick was a gelatinous soup made of pork skin or chicken feet, 皮冻. The block of jellied soup looked ok, but probably wasn't firm enough since it started to melt in the pork and crab mixture, making it quite hard ot fill the dumplings.

 

Once cooked, the dumplings did indeed have some soup inside, but because the filling was too wet, most of the dumplings didn't have enough filling and appeared a bit saggy. The crab meat didn't seem to add much flavour either, which was a bit disappointing.

 

I guess we'll have to use it in a crab and sweetcorn soup next time.
