Grilled Eggplant with Crispy Dried Shrimp and Garlic
I liked grilled eggplant, but I also like it moist when it is steamed, so I used the pan-fried dumplings / gyoza trick where the food is pan-fried but with a ladle of water to create steam. It worked a treat!
This lot of eggplant were a bit slimier than usual though, and I overdid the oil when "frying" the dried shrimp in the microwave.
