Vegan stuffed portabella mushroom

Simple as grilling red peppers, onions and tomatoes, loading them onto a washed portabella mushroom and topping with vegan mozzerella cheese (I used Galaxy's rice cheese) and the homemade breadcrumbs. Stash it in the oven to bake for a few and you've got yourself one tasty, quick meal!
