this is what i bought yesterday...


monday i start a dairy and gluten free diet, but with all the talk of cornbread, i had to get it...i was raised on cornbread, not the sweet cakelike jiffy mix, but the gritty unsweetened kind...so not sure how it is going to go over...i have my hopes up tho : )

I have some thoughts on that topic of diets etc, ,lost 40 pounds by cutting out all wheat :) sugar :) corn sugars, etc low carb glutten free is good on a system find a book or pod cast called wheat belly :)

Many compliments tonight, friend wanted to make off with the rest of it.
I gave him a wedge in a ziplock bag.

After we sat around and ate frozen bacon.
Ever had frozen bacon?
I froze the bacon for making the corn bread to not keep eating it.
Frozen Bacon.

Muffin in a Mug...Dairy and Gluten Free! Yet, Delicious!

i added fresh banana bits and walnut pieces and it turned out great!
i substituted safflower oil for the butter and cooked it for an extra 30 seconds because i added the banana and nuts. make sure you use a full teaspoon of sweetner, not the equivalent.

p.s. the lighting sucks in the morning at my place, really pretty much all day too : (

chloe, i was looking up the recipe for homemade keilbasa last night...nothing like freshly made polish keilbasa...i'd have to make it in patties as i don't have a stuffing machine, nor do i want to mess with intestines...i made homemade breakfast sausage last night so that i can make scotch eggs today, but will bake instead of deep frying them...figured i'd have them for breakfast this week...will post pic later if they turn out...

take a few spoons of the coconut oil
add the real choclate powder,
add a couple packs of truvia
a spoon full water
mix

dip strawberries
place in "ICEBOX" fridge,
let cool till chocolate is hard


for truffels add more chocolate
powder
and smoe crushed nuts

till its more solid plop out on wag paper

its zero carb and good for you and tasty

hah...cool cornbread chloe...i wondered what the fish were...and the biscuits look scrumptious Cyn!

i'm here to report that the Bob's Red Mill gluten free cornbread is a keeper...i didn't use your fancy recipe with it Posey...i wanted to make sure it would meet my approval before i wasted any precious bacon in it...the package said i had to use a grey nonstick pan to cook it...i wanted to use my cast iron skillet...maybe i'll try it next time...

some gluten free cornbread...yum

oh yeah, i save a bit in the bottom of the bowl so i could see if it would work for some johnnycakes...and it did...next time i will make less bread and more cakes...they were awesome and had much more corn flavor!

Because of moving across the whole country I did not bring one piece of cast iron with me.
#2 son Martin, Fish Trax on Flickr, inherited the cast iron fish mold, and I'm not even dead.

I did transport my square muffin tins.
With which I can make 48 huge square muffins.
Why? some might ask. I have made many of them for animal shelter fundraisers, and random social events. I love square muffins.

And as I am really broke, you will be seeing some cornbread and beans.

I mean really broke, after moving.
Not just kinda broke where you want stuff and shouldn't buy it, but really broke, where it becomes a game to stretch the few dollars through the week. With wine.
