I thought it might be nice to share some of our favorite Mr. Bento-bound foods and recipes. Personaly I'm a big fan of tossing things together with a bit of this or that, but sometimes one feels the need to do a little proper cooking. So here's my favorite so-far, dark chocolate cupcakes from the April '05 Cook's Illistrated. Don't worry if it seems complicated, it's super-easy and you don't need a mixer, just a whisk and a few bowls.


1 stick butter, cubed (8 Tbsp)
2 oz bittersweet chocolate, chopped
1/2 c cocoa powder (Dutched for preference)
3/4 c all-purpose flour
1/2 tsp baking soda
3/4 tsp baking powder
2 eggs
3/4 c sugar
1 tsp vanilla extract (the best you can get)
1/2 tsp salt
1/2 c sour cream (4oz)

Preheat the oven to 350 degrees.

Put butter, chocolate, and cocoa into a stainless-steel or Pyrex bowl, or the top of a double boiler. Fill a sauce pan (or the bottom half of the boiler) with a couple inches of cold water, and bring to a boil. let the butter and chocolate melt for a few minutes then whisk until the lumps are gone and the cocoa powder is incorporated. Set aside until just warm to the touch.

Meanwhile, whisk the flour, baking soda and baking powder in a small bowl, and line a 12-cup miffin tin with paper liners

In a large bowl, beat the 2 eggs together until combined. Add the sugar, vanilla and salt and beat until well combined. Add the cooled chocolate/butter mixture and whisk till combined. Add 1/3 of the flour mixture and combine. Add the sour cream and combine. Then add the rest of the flour and whisk untill the batter is smooth and homogenous and thick.

Divide the batter between the 12 cups and bake until a toothpick comes out clean, about 18-20 minutes. They will be cool enought to handle in about 15 minutes, and cool enough to ice in half an hour.

P.S. they are really good with coffee-flavored icing. Just thought I'd mention that.
