Here Ya go folks.
12 ounces Chocolate Chips 1/3 cup Honey 1 cup Evaporated Milk 1 Tbsp Vanilla 1 cup Powdered Sugar 4 -12 ounces boxes of Vanilla Wafer, finely crumbed Extra Powdered Sugar and Cocoa Powder for the finish coating.
Very finely crumb the Vanilla Wafers ( we use our salad shooter or the blender to get them very fine, sometimes around the holidays you can find boxes of Vanilla Wafer Crumbs at the grocery store). Melt the Chocolate Chips. Mix the melted Chips, Honey, Evaporated Milk and Vanilla into a smooth sauce. Mix the Powdered Sugar and Vanilla Wafer crumbs together (at this point you can add 2 cups finely chopped Nuts if you like). Blend the crumbs into the Chocolate mixture until it is fairly stiff and no longer sticky. Let stand at room temperature for 30 minutes and adjust with more crumbs if needed. Roll into 1 inch balls and roll the balls into Powdered Sugar and Cocoa Powder. Set in a cool place to finish drying (1 - 2 hours) before packaging and store in airtight containers in a cool place. Variations: use Orange or Mint flavoring in place of the Vanilla, it may take more flavoring to develop the flavor so it is a taste test delight. We have used the coffee flavorings and flavored liquors to change the flavor. We have made them with Graham Crackers, they taste a bit different but still good.
