I hate it when people put cheese on something that they then cook in the oven. You may as well put on a thin layer of plastic, it'd be the same on the way out.

Baked cheese rules. Try this: Take a tomato, cut out the green center and then cut about a quarter of an inch off from the top. Put cheese on the tomato, loads of cheese, and put it into the oven. Not the microwave, it's got to be the oven so the cheese will be a little crisp. Yummy.

The French make some great cheeses, in fact a lot of really great cheeses, but for fondue the Italian cheese fontina reigns supreme.

And the king and queen of all cheeses worldwide are Parmeggiano Reggiano and Bufalo Mozzarrella.

Melted cheese is so good and it makes me so sick. Bake some brie in phyllo with walnuts and some other goodies. It's lactose-heaven that turns into lactose-hell.

Baked/melted soy cheese is more like plastic than real dairy cheese.

marinated fresh mozzarella
make a marinade of olive oil garlic flat italian parsley red pepper flakes basil chives. pour over the little cheese balls and let steep for a few hours - eat on sliced crusty bagettte !

oh look I found the recipe - I thought I had a picture of this - it's sooooooo good

Marinated Mozzarella

1Lb. fresh Moz
3 Tabl. Virgin Olive Oil
3 Tabl. Veg. Oil
1 Tabl. Oil from Sun dried tomatoes packed in oil
3 Tabl. Italian parsley*
1 tabl. fresh basil*(
1 tabl. chives*
2 gloves fresh garlic minced*
3-4 sun dried tomatoes chopped*
1/2 teas. red pepper flakes*

Slice mozz and let drain, blot excess water, arranged on large plate with high sides
mix all other ingredients pour over mozz and let sit covered for two hours at room temp. Serve with sliced crusty baguette.

* or however much you want to use of any of these.

I roasted a baby once in Singapore. It's legal there. What those footballers do is just naughty though.
