Lunch.

Squash Risotto with Pumpkin seeds and Cilantro.

Its hard to not make things that are reminicient of what's coming up for Thanksgiving dinner these days. If you use vegetables that are in season, they all kind of feel like Thanksgiving dishes! The danger is, that the special event, just isn't that special! Oh well.. The Acorn Squash was just sitting there staring at us last night, and I had to stick it in the oven. Mmm.. Pumpkin seeds and Cilantro are the best.
