Another home made 'fitness' lunch. I've started walking home a few times a week after work (4 miles!) so I've been trying to have decent lunches to give me a boost!

Recipe from www.mensfitnessmagazine.co.uk:

Cook 100g wholemeal pasta according to packet instructions, drain and place in a bowl. When it’s cool, mix in a can of tuna and 2tbsp low-fat mayo. In a separate bowl, toss salad leaves with sliced cucumber and pepper, then add the tuna and pasta. Top with a small handful of pine nuts.
