Take a tropical vacation this Easter with this mango coconut carrot cake frosted with mango cream cheese frosting. I decorated the cake with an edible Easter Bunny and carrots made with molding chocolate that I tinted into various colours. My cake turned out a bit too dense to my liking but the tropical flavour is a nice twist to the traditional carrot cake. Happy Easter!

This I will have to make soon - it's combining 3 of my favourite flavours. I like the idea of it being dense, this type of texture is usually very moist.......K
