• Very moist cake but so easy to slice into neat pliable layers
  • a little rosette of frosting props up the banana chip nicely
  • toasted almond slices cover many imperfections. My best friend.

Butterscotch Banana Cake with Caramel Cream Cheese Frosting

Newer Older

Butterscotch banana cake is split into three layers and frosted with caramel cream cheese frosting. It is garnished with toasted almond slices and banana chips. This banana quickbread is special because chunks of bananas are cooked in caramel and butter until they turn to mush. This step really pumps up the flavour for the cake. The frosting is a twist on classic cream cheese frosting made with a thick salty caramel sauce.

Recipe for the butterscotch banana cake is available at Dan Lepard's column at The Guardian. Recipe for caramel cream cheese frosting is sourced from Regan Daley's In The Sweet Kitchen. Read more at Dessert By Candy.

So I am not sure why this cake is thought to be too sweet or too big. I made it with minor changes and thought that it was slightly bland when made w/less sugar. The cake is a great cake as is. I also iced each cake individually which created a less grandiose, more boring cake. It is hard to say whether I like the caramel cream or not. I thought it tasted too much like bananas, not enough like caramel. Try using half a banana instead of a whole one. and whip the cream more than the recipe calls for. mine was too fluid to spread on the cake. The pecans are PERFECT!!!! I've learned this all at www.gourmetrecipe.com and at www.everything-cake.com...they have lots of exciting and tasty recipes for you to choose from...Try it!
