This is a rather unassuming-looking dessert that tastes oh-so-good. The parfait consists of layers of mango fruit, mango gelee, Earl Grey creme, and coconut mango foam. It is served with a Earl Grey financier. When you eat a spoonful with a bit of all three layers, the combination of flavour and texture is amazing. I can eat one of these everyday.
