Labneh

I salted some greek yoghurt, wrapped it up in a clean linen handkerchief, and hung the bundle from a cupboard handle overnight, with a bowl underneath to catch the drips. In the morning, the bowl held a cup or so of liquid, and the yoghurt had solidified into labneh.

We rolled it into balls and ate it with a lentil and sumac salad - see the next photo.

Labneh, lentil and sumac salad

Puy lentils, with cucumber, capsicum and coriander leaves, and a dressing of orange juice, orange zest, lemon juice, minced red onion, sumac and olive oil. Served with warm flatbreads and extra sumac sprinkled over.
