Finished product: Scallops with Beet Greens and Baked Beets in an onion cream sauce
The Beets in cream actually was a bit underdone. Usually the cream sauce is thicker. I traditionally make this pasta dish with deveined swiss chard. The lovely brown sauce got a bit overwhelmed by the red of the beet greens. It did taste delicious though!
