Pork Chops, New Potatoes and Asparagus with GravyLately, Albertsons has had these delicious red "new" potatoes that go into the creamiest potato when boiled and then bruised with butter and parsely. I'm a fanatic about asparagus. My method for choosing them if we're not getting them from the hillsides in the spring: smell the flower: it must smell green and fresh, not the least bit nasty. They get nasty very quickly at the grocers. The stems must not be wrinkled. The buds must be perfect. I like a center cut on the bone pork chop with a fair bit of fat on the side. I like to cook them, fat side down, in the pan and then move them to finish under the broiler. D. bought me a white plate because she says our regular blue stoneware distracts from the food.
Dinner tonight: Nicole and Melissa, Dean and Dorise in attendance. This was weekend night one. Now I'm going to bed to watch Vanity Fair, eat M & M's and go to sleep. Tomorrow, Jason and Jen Wahlquist (my friend and my boss) to dinner, with of course, Ayla here too.
