Refreshing, sweet, and satisfying.
We bought these tiny avocados (like we needed any) 15 for 5.00 at a Vegetable Stand in Alpine this past weekend.
1/2 cup ripe strawberries, sliced
1/2 cup vegan mayo
1 tsp poppyseeds
Juice of 1 lemon
1 cup veggie crab, minced
3 tsp cilantro, minced
Sealt and Pepper to taste
Mix all ingredients- refigerate several hours then stuff avocado halves....serves 8 as appetizer or 4 for lunch.
