Raw yellowtail, cilantro gazpacho.
(Our take on another regional dish called "mool hwe" which
is a southern Korean preparation of raw fish where fish is served in a
broth of red pepper sauce instead of using it as a side condiment.
Raw yellowtail is served in cilantro gazpacho with asian pear, pickled onion and pearls of yuja (Korean pronunciation of yuzu).
