1. Danish Blue - In my opinion, a milder blue, with a slightly sweeter bent. 2. Delice de Bourgogne - One of my favorite French triple cremes - not just for its flavor, but also for it's history (invented by the great 18th century gastronome Jean Anthelme Brillat Savarin). Some would say it's pungent, but I think it's rather mild. As the "triple creme" suggests, it's incredibly rich and silky - especially towards the middle. 3. "Five Counties" - A traditional British layered cheese composed of five of Britain's most well-known cheeses: Derby, Leicester, Chester, Double Gloucester, and Cheddar. Commentsulterior epicure
