Three Birds, Three Meals

Three Birds, Three Meals

For Christmas dinner, I roasted up three pheasants I shot a couple of weeks before. The birds were a hit. Afterwards I made pheasant salad sandwiches from the remaining meat. I then used the carcasses to make broth which was then used to made risotto. Delicious!!!
