I was inspired by you to head out to my Asian grocer and buy yuba! Now... do you need to soak it in water or anything before using, or is that accomplished with the poaching?

it depends -- some are packaged dry (and are usually very brittle and delicate) and must be soaked to reconstitute.
These were the "fresh" versions (usually found in the freezer section) and can be used straight out of the package. Much softer and easy to handle without breaking.
