1. Roast a head of garlic -- cut off the very
top, add a little olive oil, salt, pepper.
Either make a foil pouch, or use a garlic
roaster -- 400F for 45 minutes or so.
2. Cut a slit in the middle of a tofu cutlet
and pan fry until golden. Splash with 1 tbs.
tamari at the very end.
3. Smush (the technical term) the garlic into
a paste, insert into the slit in the tofu.
4. Place the tofu on a sheet pan in a 350F
oven for 20 minutes.
