Spicy pork, watercress, potato and sweet potato stew - Shangzhi

I blogged about this photo here. My friend Elaine's mom made this stew, her nameless specialty, for the two of us on my last afternoon in Shangzhi. The stew, made from pork, watercress, potato, and sweet potato soaking in a bath of Korean hot sauce, was spicy, textured, and utterly delicious. Hopefully Elaine will learn how to make it this week so she can teach me when she gets back to Beijing.
