Course 7: Hot Potato...cold potato, black truffle, butter
The aftermath of Alinea's most famous dish, Hot Potato/Cold Potato. The dish is a small paraffin wax bowl (molded as a one-off by each cook), filled with cold potato-black truffle soup. A pin is driven through the side of the bowl, and a hot potato sphere, butter cube, chive, parmesan cube, and black truffle slice are skewered onto the pin. The diner pulls the pin, dropping the items into the soup, then eats the soup in one shot.
