Two Ingredient Lemon Bars......

    2 Ingredient Lemon Bars
Oh yeah you read that right only Two simple ingredients to make these melt in your mouth ( middle of the pie) lemon squares!

Yep this is like you cut your self a slice right out of the middle of the pie!

    This is all you need:
1 box angel food cake mix( I use Betty Crocker)
2 cans lemon pie filling (the recipe originally called for only 1 can)
I used two 21 oz cans of Comstock pie filling ( total of 42 oz)

Mix dry cake mix and cans of pie filling together in large bowl.

I just mixed it by hand...

Pour into greased 9 x 13″ baking pan.

Bake at 350 degrees for 25 minutes or until top is starting to brown.

NOTE...Mine took the full 25 minutes to get done and did not brown on top at all :))

Cool on wire rack and sprinkle with powered sugar. It has a melt in your mouth spongy texture.

I have come across this recipe in a few different places so thanks to those who shared this yummy recipe!

    Explore!!!

NOTES....Please know that for what ever reason this recipe does not work for everyone!
This recipe also has a lot of fav's so I dont want to block it for those that enjoy it.
I have no idea why it turns out perfect for some and not for others it turns out perfect for me everytime!

Help! I've tried making these three times and I can't get them to come the way they're supposed to! In my first attempt, I used one box of angel food cake mix, two cans lemon pie filling, and mixed by hand (as the recipe stated). At 25 minutes, the toothpick came out coated in wet batter (which wasn't even warm yet). After 40+ minutes in the oven, it still hadn't cooked and was more like hot lemon pudding.

I tried again a second time with one can of pie filling, thinking there was too much moisture for the amount of cake mix. It was better, but still had to cook over 30 minutes. Flavor was delicious, but texture was very heavy and gummy.

On the third attempt, I used a bundt pan to at least convince myself I was capable of baking a regular angel food cake. The texture was much better, but it still took 45 minutes to bake and was dark brown and cracked on top (just as an angel food cake would). No matter how I try, I can't get these to come out like lemon "bars" without the center being pure liquid. I'm pretty sure it's not my oven, as I have no problems baking anything else.

Thoughts anyone? Should I try taking them out a little wet and see if they'll still cook a bit in the pan? I'm dying to try these as bars like they should be!!

I'm sorry to say that I have no idea why some people have problems with these and so many others have no problem at all!
I sometimes wonder if it's the type of pie filling some are using mine is a canned pie filling like you would buy in Apple or peach etc I have also seen a jar filling that looks more like a lemon curd that I don't think would work in this recipe .
Not sure that helps at all and sorry it doesn't work for you .
I make these now and then and never have a problem !

Has anyone tried these in a muffin pan, like cupcakes? I want to make them to bring to work in 4 days and was hoping someone had tried it so I could make it easier to distribute to people. Also, if you did, did you use the paper cupcake things? Thanks!

Perhaps altitude is the reason some fail. You can use a can of most any fruit or pie filling, even a can of pumpkin and it will work. I love 2 or 3 ingred recipes, thanks. Making this for easter dinner.

This sounded so delicous, and I tried it. Something happened and the texture came out rubbery. I used 2 cans of Lucky Leaf lemon pie filling (22 oz each) and Duncan Hines Angel Food cake mix. I had such high hopes and now I think it will end up in the trash.

I just made this. and I mean JUST made. it was a total flop. I did the 2 cans and it came out soooo guwie. And fell flat right after it came out of the oven. I may try again with 1 can. But will never do 2 cans.

I think some people that have not had success with this recipe is that they are expecting something different that what the recipe is! I made this today and it was just as steamboatwillie33 described it to be.Maybe if she would describe the results in more detail the others would not be disappointed in the results. It is not a lemon bar recipe like the ones with a crust. It is supposed to flatten out when baked. I added fresh blueberries, 6 oz., to mine and used Dunkin Heinz AF cake mix and 2 cans of Wilderness Pie Filling also made by DH 15.75 oz. The results were great like a really moist cake and as SW33 says the center was like a lemon pie! I baked it 30 min at 350 using a 13x9x2 pan sprayed with bakers cooking spray containing flour. how can you judge the recipe if it has not even had time to cool? I let mine cool and then refrigerated it and everyone loved it we had ice cream too. Thank you SW33.

I'm trying it for the 4th time today in 12 days! This time I'm going with 1 can of lemon (21 oz- there's not a 22 ounce can of it in the stores) pie filling this time. It would get so soggy by day 2 that I didn't like the texture. Hopefully, this 1 can method will help that out a bit. I'm scared it won't be lemony enough with just the 1 can. I'll write back and let y'all know. My husband is totally in LOVE with these bars! (Y)

Hand mixing is the secret. If you use a mixer the outcome is entirely different.

I've made these for years! My secrets... NEVER grease the pan, and you have to mix by hand! Don't over mix either, just enough that you don't have any dry cake mix!

I followed this recipe to the letter, only thing that I did different was I baked it an additional 10 minutes, and they turned out GREAT!!! Thanks for sharing this recipe :-)

these turned out great for me. One thing though, as they were raising , I opened the oven to turn the pan and the center sunk. I also had to bake them ten minutes longer. they were a hit with my husband. I also put in a handful of blueberries as another poster suggested. Loved them!!!
