i tried some truffle-making this weekend, too, and mine look like yours. they were quite tasty, but, man-oh-man, what a mess--mostly my hands from the melting as i tried rolling as fast as possible. this is one that will need much perfecting and practice.

I completely agree. My hands were too warm. Of course, the softened exterior just picks up the coating better, but we all know I hate getting messy so I might try piping them next time, skipping the rolling altogether.
