My dad worked with an older gentleman years ago who used to bring him gallon jars of jalapenos that he had pickled; he also had carrot sticks, wedges of onion and cauliflower florets in the jars with the peppers, and those, particularly the carrots, were my favorite part - I used to dig them out with an iced tea spoon!

I'm definitely going to have to try your recipe for these. :)

I forgot to mention that The Pickle Guys on Essex make delicious pickled baby carrots--but they're crazy spicy! For some reason, the spice on them singes my mouth more than others, while Alex barely notices it. Nevertheless, it was what got me pining to make my own. We're not as good at walking down there when it is cold out.
