Fatted Calf Bacon
Taylor at the Fatted Calf has a new smoker. He was telling me about it
a couple of weeks ago. He said it would be even better. Since Taylor's
bacon was already the best I didn't pay much attention. That was till
I bought some of the new batch. It is blindingly good, thick cut and
flavourful. Even more delicious.
Here is a picture of it getting all HOT and sizzly in the pan.
I wish I had gotten a slightly larger DOF on this snap.
