White Bean Salad - Day 35
![]() Part of my diabetes lifestyle is making attempts to eat a relatively low-carb diet. This is hard for me sometimes because I love bread and pasta (I'm part Italian, what can I say?), but I made a white bean salad last night that was very easy and had some serious zip to it.
It may not suit everyone's tastes, but I liked it. And made it up as I went along. :) Kerri's Seriously Zippy White Bean Salad 2 cans of white cannelini beans, rinsed 1/4 red onion, minced 10 slices of pepperoni, chopped 1/2 cucumber, chopped 2 tablespoons of extra virgin olive oil salt pepper lemon juice It's this simple: Add all the ingredients to a mid-sized sedan (just kidding - use a bowl), mix together, and add salt, pepper, and lemon juice to taste. It was delicious, full of fiber, and very, very easy on the ol' blood sugars. It does require a significant amount of toothpaste and mouthwash to eradicate the taste, but it's worth it. :) February 4, 2008 Six Until Me. Commentshandpainter

Sounds good, I'd do anchovy instead of pepperoni...Beans and fiber are always good for my blood sugar. Thanks for the recipe.
