Stuffed pork roast with bacon wrap - ready to serve!

I'm pretty happy with it. My previous stuffed pork loin roast was too dry. This was better, but still not as moist as I'd like. I think I'm still overcooking it. (Can't get past the idea that pink pork is poison...)
