Lamb Couscous, Asparagus & Salad

Marinated and seared lamb kabobs on spinach-lemon couscous.

Asparagus drizzled w/ olive oil and sprinkled w/ pepper then oven roasted on a cookie sheet.

Watermelon, basil, goat cheese & shallot salad with olive oil, S&P and drizzled with a little nice balsamic vinegar.

(the watermelon is very moist, go figure, so I think I'd slice it into larger chunks next time and layer it on a serving platter. I'd also like to try goat's feta as I think it would hold it's shape better than the basic goat cheese)

Roast Pork Loin stuffed w/ Italian fennel sausage, sun-dried black olives, scallions, sage, S&P.

Roast Potatoes w/ "the usual" (rosemary, S&P, olive oil, garlic)

Off-the-cob corn, fresh shucked peas from Keremeos and strawberry tomato salad!

Myra Canyon KVR Panorama

Sitting in the middle of Myra Canyon, this panorama shows three of the many sides to the canyon. It has at least 18 trestles, some of which were destroyed by the huge fire the valley had in 2003, which were repaired and upgraded. The grade barely visible on the far side of the canyon is the same trail this photo was taken from, but further along towards Chute Lake/Naramata.
