vegan young coconut ice cream
prepare an ice cream maker, for us that means freezing an ice cream cylinder overnight. we have a cuisinart ice cream maker that my folks gave us.
1 can coconut cream ~14 ounces
.75 cup sugar
1 teaspoon vanilla extract
1 lb shredded young coconut.
in a saucepan, combine the coconut cream, sugar and vanilla, stir until dissolved together. allow this to cool. pour cool ingredients into an ice cream maker and mix for 25-30 minutes until desired consistency is reached. ours needed another hour in the freezer after mixing until it was solid.
