until today, i'd only heard about other families eating marshmallows on their yams, it seems kind of white-trashy to me but there are zillions of recipes out there for it, and we figured nick would love it, so here is our own mashup of various marshmallow candied yam recipes:
6 yams (orange, purple, other colors as desired)
0.5 cup maple syrup
0.5 cup brown sugar
3 cups marshmallows
1 stick butter (1/2 cup)
wash peel and slice the yams into cubes.
boil or microwave the yams until soft, about 20 minutes either way.
melt 2 cups marshmallows, syrup, butter, and sugar in a large pot on
the stove
add yams to pot and stir until the potatoes are mashed to your desired
consistency (chunky style shown in photo)
pour mashed yams into a 9''x9'' baking pan, cover with the remaining
marshmallows, and bake for ~10 minutes at 400 degrees (just to toast
the marshmallows).
remove from oven and serve.
WARNING: this concoction is sweeter than any pie you can serve for dessert. your kids may not make a dent in any of the pies you bake (or anything else on the table, like salad or salmon) if you're serving this yam-crack with dinner.

although not white (just realllllly well assimilated ;), my family also serves these up for both thanksgiving and christmas. one of the things i miss about america......

This is basically sweet potato souffle (except the consistency, sps is smooth rather than chunky as the name would indicate) which is quite popular in the South. I don't care how white-trashy they are; I love my marshmallow yams!
