black beans and fried green plantains

    black beans
    2 cups dry black beans
    4 cups boiling water
    2 cups diced tomatoes
    3 cloves garlic
    2 chili peppers
    1 onion

    fry the onion and garlic in oil until soft. add all remaining ingredients, bring to a boil. pressure cook for 30 minutes or simmer for 120 minutes, until beans are soft. salt to taste.

    fried green plantains
    2 plantain bananas
    4 cups water
    2 tbsp garlic
    1 tsp salt

    dissolve salt in water, add garlic. slice the bananas into quarter-inch strips, soak in garlic-salt-water for a few minutes. deep fry @300 degrees for 2 minutes. repeat soak-fry one more time.

    serve

    serve together with sour cream and cilantro.
