more bread

more bread by scottfeldstein.
I swear I will stop uploading shots of this now. I just can't get over how easy it is to do! And it's better than any bread I can buy at the supermarket.

Looks great and good to know that it's not too hard to do.

Basically it's adapted from one that appeared in the NY Times recently. You're supposed to use a dutch oven, but I don't have one.

3 cups all-purpose flour
1 and 1/4 teaspoons salt
1/4 teaspoon dry active yeast
1 and 1/2 cups water

Mix dry ingredients in a large bowl then add water. Mix until dough comes together in a ball. Cover and let sit in a warm place for 12-18 hours. On a floured surface, fold over on itself a couple of times, cover and let rest for 2 hours. Heat oven, pizza stone and pie pan to 450. Place a hand full of ice cubes in pie pan under pizza stone. Dust dough with corn meal and place dough on pizza stone. Bake for 30-40 minutes.

I'm probably doing about eighteen things wrong, but with results like this, how wrong can I really be?

Really easy and the amazing part is the crust. First published by food writer Mark Bittman in the NY Times and also advocated by baking goddess Rose Levy Birenbaum. I have made it probably 30 times and it is amazing. The crust is amazing: hard and cracking-crisp like a great sourdough or French baguette.
