hasty dinner

My original plan was to make braciola ( an Italian dish made with thin slices of beef wrapped in a mixture of bread crumbs and cheeses). The braciola spoiled though because I didn't freeze it right away when I got it, so it sadly had to be thrown out. I almost cried at throwing away $7 of perfectly razor-thin, sliced beef.

The chicken breast was defrosted fast and made into chicken cordon bleu with some mozarella and ham on hand. They were then rolled in cornstarch, then an egg wash (egg/milk/spices) and finally breadcrumbs. The meats and cheeses are held together while all this rolling by a toothpick, which is later taken out when it needs to be baked. The sides are mashed potatoes, which were made by boiling new potatoes for 30 minutes with a beef bouilllon cube. The cube added so much flavor that I found I didnt' need a drop of butter, I just added some grated cheese. There was also sauteed spinach with onions & black eyed peas.
