I just tried this recipe. The cake rose well in the oven, but it lacks fluffiness and moistness. I think I stirred it long enough, but maybe not. Next time I might add some curd. The brown butter taste was very intense, but only in the batter that didn't make it into the cake pan. Most of the butter flavour got lost in the oven it seems.

madworm, i'm sorry that it wasn't what you expected. i wonder what needs to be amended - hmm... hard to approximate since i wasn't there with you! :) maybe it's the weather? I like to blame the weather for much of woes in general. It can't defend itself so pretty effective!

Nothing serious, it is fixable.

I'll just have to infuse the cake with a bit of diluted lemon juice and something tasty. Calvados comes to my mind. Apples in any form and cake are a perfect match ;-)

This cake / recipe is very far away from my worst experiences. Some of them came out the oven as impenetrable brick stones.
