brioche mini-burgers

not exactly sliders because they didn't quite slide down my throat....grilled sirloin beef mini-burgers seasoned with kosher salt and black pepper, served on homemade brioche buns with melted fresh mozzarella and a green pesto made with arugula (rocket), mint, roasted garlic, parmesan, walnuts and lots of olive oil.

fram, i have no idea--i use a good 50% butter ratio in the mix so why do they end up so dry? i find that if they rise more they are less dry, so i double the yeast in recipes now. is it the eggs? i find that eggy bread can be dry as well. now there is a lab experiment i'd be willing to do.

This is a fantastic shot. It's making me hungry! I love tiny little bite-sized mini foods, they're always so cute. Did you make the buns the perfect size to begin with or have to cut them out with something after baking a bunch of brioche? They just seem so perfectly proportioned to the burgers.
