scotch egg

scotch egg by chotda.
a hardboiled egg encased in sausage meat, rolled in breadcrumbs and then fried. fried. fried.

scotch egg recipe

6 hard-boiled eggs, well chilled (i try to cook them to just past soft boiled stage, then stick them in the coldest part of the fridge to firm up)
1 pound good quality sausage meat (i used ground turkey meat, seasoned with sage, white pepper, salt and a tiny bit of maple syrup)
1/2 cup AP flour
1-2 eggs, beaten
3/4 cup panko-style bread crumbs
Vegetable oil for frying

peel eggs; divide sausage into 6 portions.
roll each egg in flour then press and shape a portion of the sausage around each egg.
dip sausage-wrapped eggs into beaten egg and roll in panko.
heat oil to 350˚F .
cook each egg for 4-5 minutes (longer if shallow frying--constantly turn the eggs around for best results) or until sausage is cooked and browned.

hallo miss saffron! you know, i haven't fried anything in so long that it was almost enjoyable frying these. shallow fry, had to turn them over once. flipped through a magazine whilst waiting for each side (4-5 minutes each)

maomau, you are going to see this plate again, i luff it much. i found it in a bargain shop, there's something wrong with the transfer of the pattern (the red and yellow lines don't intersect in the middle perfectly), but i like it that way.

also, i boiled the eggs to just past soft boil stage then stuck them in the coldest part of the refrigerator to get them super cold before peeling them--i was hoping the second cooking would keep them a little runny, but this worked out well anyway :)

sugarfreak, i've heard it's a traditional scottish recipe. i don't know a single scot who eats them, though! in england i've seen these sort of prepackaged mini ones that are cute, but have some sort of dodgy egg salad filling. these are PERFECT for bento, because they are very good at room temperature/cold.

pengrin, it's great! compact and portable.

kate, they're a little unwieldy to eat (really, when did eggs get so big? i think these must've been originally made with very small eggs), but sort of like a more compact and tastier breakfast sandwich.

belsandy, you need to roll the eggs in flour so the sausage meat sticks to the egg. i've seen some made where they don't use flour (sometimes egg, sometimes nothing), and you get a big gap where the egg sort of rolls around in the sausage meat like a trapped hamster in an exercise ball. i personally prefer that there isn't a gap.
