it's like fresh lumpia, but it has some sort of noodle in it (yam noodle?) and some crunchy bits along with the usual veggies. the sauce is in the wrapper, a type of brown bean sauce.

This brings back memories... (Down to the lady in a wet market who made and sold the BEST pohpiah skin in all of S'pore: thin yet sturdy. Never worked out how she made them.)

The "noodle" inside is shredded "bang kwang". It's of some turnip variety, but I'm not sure which one.

The crunch comes from deep-fried lard/pork skin. It's optional. Needless to say the lard was ubiquitous in all our pohpiah until my dad's first cholesterol test...

i gotta learn how to make that skin. i think the sisters popiah in malaysia just uses batter bits instead of pork skin because it's supposed to be halal, i think.....i could be thinking of somewhere else though.

response to framboise... The 'bang-kwang' is known as jicama in most western countries. Also known as 'sengkuang' to some.
