I've never ridden in one, but from what I have seen and heard, the ring bit adds to the stopping and turning power of the other bit in the mouth (snaffle) because it encircles the jaw.

Different bits apply pressure to different part of the horse, such as poll pressure, tongue pressure, and pressure on the bars of the mouth. A ring bit applies the pressure on the tongue and bars of the mouth in a controlled way. I think the reason we don't see it on pleasure or show horses because it does not seem to allow a lot of independent turning.
