Pineapple upside down cupcakes

Pineapple upside down cupcakes by RBerteig.
Pineapple upside down cupcakes, made in a pineapple shaped bundt pan from Nordicware. The pan is designed to hold the ring of sliced pineapple in position along with a cherry. They were good.

They were something of a flashback to my childhood memories of my mother making something similar on special occasions. The biggest difference from hers was that she didn't have the pan with the depressions in the shape of the pineapple rings. Oh, and the cherries were still made with Red Dye #2, which dates me a little bit ;-)

It was tricky to figure out exactly how to remove them from the extremely hot (and heavy cast aluminum) pan. The solution we used was to put a cookie sheet over the top, and then flip the whole thing. We were worried that the caramelized sugar wouldn't release well if we let it all cool.
