White bean soup

    Soak 2 cups of beans overnight. Add some bacon and olive oil to a stockpot. Let the bacon get a bit crispy, then add a chopped onion, a few minced garlic cloves, and a couple of chopped carrots. Add a tablespoon or two of tomato paste. Chop up lots of herbs and add to the pot. I used rosemary and sage. Add the soaked beans and stir it up. Add some stock or water to cover to your liking. I like thick soup, so I add less liquid. Bring to a boil and cook for about 45 minutes, or until your beans are soft. Sometimes I use an immersion blender to make the soup a bit creamy. Add lots of salt and pepper. Eat.

      Yumm!!! I came here through Pinterest this afternoon and just finished eating dinner where my whole family was raving about this soup. I added lots of rosemary and a little dash of apple cider vinegar. So good with crusty sour dough bread. Thanks!!!! This will get eaten often!
