Thanks everyone! Here's the recipe:

for the shortbread:

1 1/2 cup all purpose unbleached flour
1/3 cup organic cornstarch or tapioca starch
1/2 cup confectioner's sugar
2 tablespoons granulated cane sugar
zest of 2 lemons (preferably Meyer lemon)
3/4 cup Earth Balance buttery stick
1/2 t sea salt
juice of 1 lemon

1. line an 8" square baking pan with parchment paper (or foil) leaving overhang on the sides to serve as handles

2. sift the flour, starch and confectioner's sugar together in a mixing bowl

3. in a stand mixer, combine the granulated sugar, zest, Earth Balance, salt and juice, beat with the paddle attachment until combined and fluffy, add the dry mix and combine gently until well incorporated

4. pat the dough into a flat circle and cover with plastic wrap, refrigerate for half an hour

5. preheat oven to 300 degrees

6. press dough evenly into prepared pan and bake for 45 minutes until golden, cool on a wire rack

For the lavender lemon icing:

1 cup confectioner's sugar
3 teaspoons dried culinary lavender
2 teaspoons lemon zest (preferably Meyer lemon)
1-2 tablespoons lemon juice

1. whisk all ingredients together, starting with one tablespoon of lemon juice and adding more as needed to create a smooth, pourable iceing

2. immediately spread evenly on the cooled shortbread

3. chill in the refrigerator and cut when icing has set firmly, about one hour

I haven`t find any good-one, all of those I`m tried are turned out little hard and too flat/easily broken kind. Maybe I have just been too inadvertent when searching them?
I think those lavender cookies are more like "fluffy" and soft-kind of bakings? Not like harder cookies like those in that recipe which is also in this message?

Little "offtopic" but Do you have any good recipe suggestions for making that kind of cookies/shortbreads which appears in this recipe i posted, but without any animal ingredients?

This recipe is definitely a flaky and light shortbread, much softer than a shortbread cookie that would be a little crisper.

The recipe you linked to could be made vegan, for sure. You'd probably have to play around with it a little, but I might suggest trying some cornstarch and a little water to replace the egg and browning (not burning as the poster suggests) some Earth Balance or other soy margarine--don't know what's avaliable to you. You can also try veg. shortening which makes for a very flaky shortbread cookie. You'll want it crisp, but still flaky I think.
