• Fresh
    Bellwether Farms Ricotta (California)
    Pasteurized sheep's milk
Very mild, delicate, slightly sweet. Great with a bit of honey!
  • Mild & Buttery
    Point Reyes Farmstead Toma (California)
    Pasteurized cow's milk
Aged about 3 months, delicious buttery flavor.
    Loved it!
  • Alpine
    Compté (France)
    Raw cow's milk
Would be great on a grilled cheese, but thought it was so so by itself.
    Raw cow's milk
  • Grana / Aged
    Parmigiano - Reggiano (Italy)
Excellent. This style is highly regulated, and it's all good. Small crystals form to make delicious little crunchy salty bits.
    Raw cow's milk
  • Cheddar
    Lincolnshire Poacher (England)
    Buttery, slightly sour/sharp finish. Great.
    Raw cow's milk
  • Cheddar
    Hook's 5-year Cheddar (Wisconsin)
Very creamy, sharp. Good, not great. Yellow color is actually traditional from UK, but still seems fake.
    Pasteurized cow's milk
  • Bloomy Rind / Triple Crème
    Brillat-Savarin (France)
70% butter fat is where it's at. Delicious.
    Pasteurized cow's milk
  • Goat's Milk (Chèvre)
    Saint Maure (Loire Valley, France)
Very smooth and tasty. Different from fresh chevre at Harley Farms.
    Pasteurized goat's milk
  • Sheep's Milk
    Abbaye de Belloc (France)
Awesome, my other favorite. Rich, slightly salty, firm.
    Pasteurized sheep's milk
  • Washed Rind
    Munster d'Alsace (France)
Strong, earthy flavor. Some types are nutty and smoother. This one was a bit too stinky.
    Pasteurized cow's milk
  • Spiced (Flavored)
Cotswold w/ chives and onions (England)
Really good, would be awesome as a base for mac and cheese!
    Pasteurized cow's milk
  • Blue
    Colston Bassett, Stilton (England)
Good flavor, nutty rind. Nice with honey.

At the San Francisco Cheese School. Yum!

We ate from 12 o'clock on the plate starting with Ricotta and finishing with Stilton. Point Reyes Farmstead Toma and Abbaye de Belloc were my favorites.

Before I became vegan my sisters and I use to have what we called cheese and wine parties where we would sample cheeses and wine, so much fun. Great capture, love the way it is presented.
