Well how did that happen? Christmas snuck up on us again =D
Chic our Chihuahua reindeer, looks like she is chowing down on my cookies, but don't worry no cookies for doggies, she is working on a dog treat in there lol.
These are my favorite Christmas Cookies , whipped shortbread, easy to make and heavenly melt in your mouth goodness =)))

Whipped Shortbread recipe

1 Cup of Butter (not margarine, you need real butter for shortbread)
1/2 Cup white powder icing sugar also known as confection sugar
1/2 Cup of corn starch
1 Cup all purpose flour
1/4 tsp. salt

It is best to have the butter at room temperature, just take butter out a few hours before you plan to bake the cookies.
Preheat oven to 325 degrees
Mix all dry ingredients together in small bowl & set aside. In a medium to large size bowl beat butter until fluffly. then slowly beat in bowl of dry ingredients. Be patient dough will be crumblely at first then will beat in to a fluffy mixture within a few minutes. Then drop by teaspoons for smaller cookies or tablespoons for larger cookies, 2 inches apart on ungreased cookie pan. Smaller cookies usually take about 15 mjins. to cook while larger cookies may take up to twenty depending how hot your oven is, so watch carefully, they are only suppose to be slightly golden around the edges. =) Let cool a few minutes on pan, then remove to cooling rack, they are a little delicate so handle carefully, once they are cool they are more sturdy. These freeze well, and can handle sprinkles or candied cherries. Dip the tips in chocolate for an extra treat. If you really prefer a more rounded cookie you can very gentley mould into round balls and press down on them slightly with palm of your hand, before baking. Over handling will make them tough. Cool and enjoy =) The end product is a very velvety melt in your mouth shortbread. cookie
