roast chicken

roast chicken by pinprick.
my lovely chicken. a little secret: the first hour of roasting, roast breast side down. the breast will stay tender that way. then flip and let the top get crisp and golden (making sure to baste!).

roasting a chicken is ridiculously easy. this one looks beautiful! do you use a roasting pan, or just any old thing (fireproof socks, tinfoil hat, etc.)? i usually lace mine with whatever fresh herbs smell good, an onion, and maybe some garlic. looks like you've got an onion tucked away in there, what else??

ps--my kraken is glaring at me as i type! i love working under the watchful, sullen eye of the kraken.

thanks, it did turn out pretty. i always use an onion inside, and usually a lemon as well. if i can find fresh herbs, i use those too, but the midwest makes them harder to find and a bit more expensive. this summer i'm going to have to grow some.

i roast it in some sort of shallow pan. a sturdy sheet pan is best, like the kind you'd make a jelly roll with. i line the bottom with celery and carrots and onions so the chicken has something to sit on:-)
